Pina colada vegan mousse (pineapple and coconut)
ingredients
1 can coconut milk
500ml pineapple juice without sugar
2 tablespoons rice jelly (optional)
1 tablespoon of agar agar powder
topping (optional)
dehydrated Pineapple unsweetened
grated coconut
Preparation:
1. Place all the ingredients in a saucepan, bring to medium heat and stir. When boiling let it boil for 2 min. Pour into an oven dish and allow it to cool before placing it in the refrigerator.
2. Place in the refrigerator and leave it till it solidifies completely (ideally leave it overnight).
3. After solidifying the mixture, use the hand blender and grind till it becomes a mousse / cream.
4. You can serve with grated coconut and dried pineapple.
