Fresh Summer Salad
Ingredients:
250gr of sweet corn
30g couscous
1 shallot
1 small avocado pear \ medium
1 apple
2 small beetroots cooked
6 stems of chives
mint
lemon juice q.s
2 tablespoons of sunflower seed
sea salt q.s.
ground Pepper q.s.
olive oil q.s.
hemp seeds q.b
Preparation (The hardest part of the recipe ...)
1. Place in a bowl the sweet corn, shallot cut into thin slices, chopped avocado, unpeeled apple and beetroot.
2. Then chop the chives and mint and place them also in the bowl. Then pour the sunflower seeds and season with the lemon juice, pepper, salt and olive oil and mix everything. Taste and correct the seasoning, if necessary. For a more intense flavour reserve in the refrigerator before serving for about 30 minutes. .
